We also went a few years doing a combo (that I'm not at all sure where the family found it) of roasting sweet potatoes then mashing sweet potatoes and then covering them with roasted caramelized onions and serving them on a bed of wilted spinach (cooked with just a little bacon). It's a nice combo.
