Thank you so much for posting this! My in-laws are on a sweet potato kick and a couple of weeks ago made simple roasted ones to serve at a barbecue. They served them plain without fat, but they were still delicious!
Now that I know what incredible nutritional powerhouses they are, I've bought a few and will be baking them tomorrow (to eat with a little butter and nutmeg).
