I haven't done the DVD Meme because I actually don't own very much. Anyway, here's what I've got:

BTVS: Seasons 2,3, and 5-7
AtS: Seasons 2,3,5
Farscape: Complete Series
Northern Exposure: Seasons 1 & 2
Red Dwarf: Seasons 3 & 5

Especially considering that Northern Exposure was a summer replacement and midseason replacement so season 1 & 2 are only one disk each.

And, Red Dwarf, being British and so with a very brief seasons, so they too are also just a single disk each.
