It seems a substantial change to me. And a surprising one. I'm thinking it may have boiled down to safety concerns...? Dunno. Unlike the Jaime stuff we know, I don't know that this is a change that I like. We'll have to wait and see.

Jorah in the pit is a change. The main change is that Dany hadn't 'met' Tyrion by the end of Dance with Dragons. In the book, to Dany, Tyrion was just a random dwarf used for 'entertainment' in the pit and (at a distance) she calls a halt to it, saying that it was cruel (She is NOT a fan of this gladiatorial spectacle in the book. She finds everything about it repugnant.) She and Tyrion do not actually meet up close or with her knowing who he was. (And then Tyrion goes off and does something else next.)
In the photos, Tyrion is sitting near her on the diaz, so clearly they do meet (in some sense). Additionally, Daario is also around (which he isn't in the book). And Barristan Selmy isn't around, but he is in the book (however, Barristan would recognize Tyrion, so it might be possible that she doesn't know who Tyrion is, which may have necessitated absenting Barristan Selmy from the scene for logistical purposes. Who knows. Clearly the scene is different from the book so it's pure speculation).
In the book, the pit's gladiatorial battle is a 'shit hits the fan' moment where ultimately she's in the midst of a huge clusterf--- and dives into... well... it should be a spectacular episode (season?) ender. (I'm betting it's a penultimate like the Red Wedding was with a different scene as the final scene of the season).
At any rate this is probably the huge set piece of the season. And if anything, raises Jorah's profile.
After some thought, I can see the change, having Jorah in the pit rather than random gladiator, because it would work better on a personal motivation level for Dany (and the audience). I'm just a tad disappointed that Tyrion didn't end up in the pit.
Since this is not the way things go down in the book, there's no way to know what happens to Jorah. Though I would think the Dany exit remains the same because it's the biggest kick-ass moment in the book.

She's been conflicted about that damned pit re-opening (by demand) for the entire book and was insistent that the only ones in it be ones who were volunteering to be in it for the prizes. The Tyrion situation in the book made it clear to her that it wasn't nearly as voluntary as the Mereenese had claimed. Basically, it's the scene where she's had enough.

Though things have changed in the scene, I doubt the purpose of it has. Danny has spent the entire book compromising for 'peace' , trying to accommodate the Merenese. This is setting up the moment she metaphorically says ' screw you all. I am Dany Targaryan, mother of dragons!'
After all, its a GOT wedding, you know something huge is about to go down.
